Serves 2
A quick breakfast for 2 full of protein, vitamins and minerals. Eggs are a great source of vitamin D and B vitamins, good for your overall health.
Ingredients:
1 tsp rapeseed oil
½ an average sized tomato, sliced
2 mushrooms, sliced
¼ of a yellow pepper, sliced
3 eggs, beaten
30g reduced fat Cheese, grated
1 average wholemeal tortilla
Sprinkle of salt and pepper (optional)
Method:
1. Heat the oil on a medium heat in a large frying pan.
2. Add the sliced tomatoes, mushrooms and peppers and cook for 3-5 minutes until softened.
3. Pour the beaten eggs over the vegetables and, if using, sprinkle with salt and pepper.
4. When the eggs have set, evenly sprinkle the grated cheese over the top.
5. Place the tortilla on top of the eggs and use a spatula to loosen the cooked omelette before flipping it over so that the wrap can heat in the pan.
6. Ensure the eggs are cooked through before transferring to a plate/chopping board to be divided into 2.
TIP: The wrap can be served on its own, with the leftover tomato and peppers or with a selection of your favourite greens!
