Vegetable Frittata

Serves - 4


1 small red onion

250g sliced mushrooms

1 tomato

1 green pepper

300g cooked potatoes

6 eggs

50g cheddar cheese

1 tablespoon black pepper

1 tablespoon of  Moroccan spice

2 small cloves of garlic


  1. Finely chop the onion; fry in a little oil with the mushrooms until softened and reduced
  2. Add the chopped tomatoes, the green pepper and cubed potatoes
  3. Cook for 5 minutes
  4. Beat the eggs and season
  5. Pour the mixture into the vegetables, sprinkle with the grated cheese and leave to set over a low heat
  6. Turn on the grill and place under to cook
  7. Serve with wedges with a green salad or lightly steamed broccoli
