Quorn Spaghetti Bolognese

Serves - 4


1 tbsp Rapeseed Oil

300g Quorn Mince

400g Can of Chopped Tomatoes

1 Red Bell Pepper, Chopped

1 Medium Onion, Chopped

1 Medium Carrot, Grated

1 Garlic Clove, Chopped

1 Cup Mushrooms, Sliced

1/2 Vegetable Stock Cube

150ml Boiled Water

280g Whole Wheat Spaghetti

1 tbsp Fresh or Dried Basil

1 tbsp Tomato Pureé


  1. Heat the rapeseed oil in a pan and fry the onions, garlic, pepper and mushrooms until soft.
  2. Add the vegetable stock cube to 150ml boiled water.
  3. Add the canned tomatoes and vegetable stock to the pan with the vegetables.
  4. Add the tomato pureé and stir.
  5. Bring the sauce to a simmer and put in the quorn mince.
  6. Simmer for 15 minutes until the quorn is cooked and the sauce has reduced.
