One Sauce, Five Meals

Serves - 4


1 large onion, diced

5-7 handfuls of mixed vegetables (e.g. carrots, aubergine, courgette, mushrooms, peppers, broccoli, peas, sweetcorn, butternut squash, pumpkin, sweet potato, tomatoes)

1 x 400g can of chopped tomatoes/passata

1 table spoon of olive/vegetable oil


Tip: multiply up to batch freeze


  1. Heat the oil in a large pan, add the diced onions and allow to soften.
  2. Add in the aubergine, pepper, courgette and mushrooms and cook on a medium heat until soft.
  3. Add one tablespoon of tomato puree and the copped tomatoes.
  4. Cook for another 5 minutes on a medium heat.


Tip: Add herbs and spices to your taste and freeze – for example add garlic (fresh or dried) with oregano and or basil for a great pasta sauce!

If cooking for the kids, blitz with a hand blender for a smoother consistency and hidden vegetables!
