Oaty, Carrot and Raisin Cookies
Serves - approx 15 cookies
70g of porridge oats
70g of self-raising flour
70g of butter, at room temperature
2 well mashed/puréed ripe bananas
1/4 teaspoon of all spice
1/2 teaspoon of cinnamon
50g of grated carrot
40g of raisins
2 teaspoons of agave syrup
- Preheat the oven to 180c or gas mark 4.
- In a bowl, mix together the flour, oats, all spice and cinnamon.
- In another bowl, mix together the butter, banana and agave syrup.
- Add the butter mixture to the oats and flour until ingredients are well combined and then stir in the carrot and raisins.
Line a baking tray with some parchment paper and spoon about a tablespoon of the mixture onto the tray, flatten it down with the back of a fork, so that you have a rough oval shape. Repeat with the rest of the mixture.
Place in the oven and bake until biscuits are nice and golden approx 18-20 mins, transfer to a wire rack to cool.
Store in an airtight container.
