Oaty, Carrot and Raisin Cookies

Serves - approx 15 cookies


70g of porridge oats

70g of self-raising flour

70g of butter, at room temperature

2 well mashed/puréed ripe bananas

1/4 teaspoon of all spice

1/2 teaspoon of cinnamon

50g of grated carrot

40g of raisins

2 teaspoons of agave syrup


  1. Preheat the oven to 180c or gas mark 4.
  2. In a bowl, mix together the flour, oats, all spice and cinnamon.
  3. In another bowl, mix together the butter, banana and agave syrup.
  4. Add the butter mixture to the oats and flour until ingredients are well combined and then stir in the carrot and raisins.
  5. Line a baking tray with some parchment paper and spoon about a tablespoon of the mixture onto the tray, flatten it down with the back of a fork, so that you have a rough oval shape. Repeat with the rest of the mixture.
  6. Place in the oven and bake until biscuits are nice and golden approx 18-20 mins, transfer to a wire rack to cool.
  7. Store in an airtight container.
