Healthy Chocolate Courgette Cake

Serves - 8-12


1 & 1/2 cups of Wholemeal Self-Raising Flour

1 cup Ground Almonds

2 cups Grated Courgette

1/2 cup Cocoa Powder

1/2 cup of any liquid sweetener (honey, agave syrup, carob syrup, date syrup)

1 tsp Baking Powder

2 Eggs

2 tbsp Coconut Oil

1 tsp Vanilla Extract


For the Choco-Avo Frosting

1 Avocado

1/4 Cup of cocoa powder

1/4 cup of liquid sweetener

1 tbsp melted coconut oil


  1. Mix all dry ingredients together in a large mixing bowl.
  2. Then add in eggs and grated courgette and mix well, followed by vanilla extract, melted coconut oil and sweetener.
  3. Line a round cake tin with baking paper or line with coconut oil.
  4. Pour the ingredients into the tin and bake at 180°C for 35 minutes.
  5. Leave to cool on a cooling rack.
  6. For the frosting blend the avocado until it forms a smooth paste then add sweetener, cocoa powder and coconut oil.
  7. (Optional) To decorate sprinkle desiccated coconut and flaked almonds over the frosting!
