Serves - 8-10


1 large white cabbage

6-8 large carrots

1 small onion or a few spring onions (optional)

A handful of sultanas or raisins (optional)


4-5 tablespoons of low fat mayonnaise or salad cream


1-2 tablespoons of low fat mayonnaise mixed with a large pot of natural yogurt


French dressing:

4-5 tablespoons of oil- try sunflower, rapeseed or olive

1-2 tablespoons of wine or cider vinegar or lemon juice

Black pepper

A little bit of crushed garlic



  1. Remove any damaged leaves from the cabbage. Scrub and peel the carrots
  2. Shred the cabbage finely on the chopping board using a sharp knife
  3. Grate the carrots coarsely
  4. Mix together the cabbage, carrots and any optional ingredients
  5. Drizzle over your chosen dressing and mix well to combine
  6. Serve
